Wild Sole with a Lemon Caper Pan Sauce

Quick and easy, this flavor packed Wild Sole dish is a great option for the whole family!

  • 1lb Wild Grey Sole Skin Removed if not already done
  • 2tbsp Olive Oil
  • Salt and Pepper
  • 1/4 Cup Dry White Wine
  • 1 Lemon Juiced
  • 1/2 Jar of Capers (usually come in a 3.75oz jar)
  • 3 Tbsp butter
  • Bunch of Fresh Parsley roughly chopped
  1. 1. Preheat oven to 275°F
  2. 2. Pat fish dry with a paper towel
  3. 3. Sprinkle both sides with salt and pepper
  4. 4. In a medium or large sautee pan warm the olive oil over medium heat
  5. 5. Once hot add the fillets of fish- you may have to work in two batches. The fish cooks extremely fast. 1-2 minutes per side or until the fish is no longer opaque
  6. 6. Once done place on a baking sheet and keep warm in the oven while you make the sauce
  7. 7. Using the same pan you cooked the fish in, deglaze the pan with the white wine and reduce by half
  8. 8. Add the juice of 1 lemon, the capers, and the butteronce the butter is melted and all ingredients are combined- 1 minute, add the fresh parsley
  9. 9. To serve take 1-2 pieces of fish and spoon the sauce over top it
