Strawberry Cheesecake Brownies

I wanted to create something really fun looking for a birthday besides your typical cake. They came out just as tasty as they looked!

  • 1 box brownie mix + ingredients from box
  • 1- (0.11 oz.) pack instant espresso
  • 16 oz. cream cheese softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup butter (2 Sticks)
  • 4 tbsp. seedless strawberry jam
  • 3 cups powder sugar
  • 2 tbsp. flour
  • Any fun sprinkles or decorations you want to use
  1. 1. Preheat oven to 350°F.
  2. 2. 2. Grease a 9 x 13 pan
  3. 3. Prepare brownie mix according to box and with adding the instant espresso
  4. 4. Bake for 18-20 minutes
  5. 5. Allow to cool for 20- 30 minutes
  6. 6. Prepare the cream cheese layer by using an electric mixer fitted with a paddle attachment. Cream the cream cheese and sugar together until fully incorporated. Slowly add one egg at a time and scrape the sides of the bowl between eggs. Mixture should be very smooth
  7. 7. Pour over cooled brownies and bake again for 35-40 minutes or until cream cheese is set
  8. 8. Again with an electric mixer fitted with a whisk, cream the butter and jam together. Add one cup of sugar at a time into the butter mixture. Add a tbsp. of flour between each sugar add. Frosting should be light and fluffy
  9. 9. Frost completely cooled brownies
  10. 10. Chill in fridge for 2-24 hours before cutting. Decorate however you desire
