Shrimp Fajitas with Cilantro Lime Sour Cream

Simple and as spicy as you like it, this zesty and customizable dish is PERFECT for your next family dinner.

  • 1 1/2lb peeled and de veined shrimp
  • 2 tbsp olive oil
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 1 orange pepper sliced
  • 1 red onion thinly Sliced
  • Salt and pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • 1/2 tsp. Oregano
  • 2 tsp. Chili powder
  • 1 lime juiced
  • 1 cup cilantro
  • 1 jalapeno (seeds removed if you do not prefer heat)
  • 2 tbsp. Water
  • 1 cup sour cream
  • Flour tortillas warmed
  • Extra lime wedges, jalapenos, and cilantro for garnish
  1. 1. Preheat oven to 450 degrees
  2. 2. While oven if preheating toss shrimp, peppers, onions, olive oil, and all seasonings in a large bowl. Toss to coat throughly
  3. 3. Spread shrimp and veggie mixture on a sheet pan
  4. 4. Put in the oven and bake for 8 minutes
  5. 5. While the shrimp and veggies are cooking, prepare your cilantro lime sour cream
  6. 6. Using a blender, add your lime juice, cilantro, jalapeno, water, and a dash of salt
  7. 7. Blend until it becomes a liquid. You will still see bits and pieces of cilantro
  8. 8. Stir into sour cream and set aside until ready to serve
  9. 9. To build- Place 2-3 shrimps on a warmed tortilla with a heaping amount of peppers and onions. Drizzle cilantro lime sour cream over top and enjoy
  10. 10. You can also top with extra jalapenos if you like it extra spicy and/or simply with the juice of a lime wedge and cilantro
