Pumpkin Lovers Muffins

ingredients
  • 2 Cups Flour
  • 1Tsp Baking Soda
  • 2 Tsp Ground Cinnamon
  • 1 1/2 tsp Pumpkin Pie Spice
  • 1/2 Tsp Salt
  • 1/2 Cup Sugar
  • 1/3 Cup Brown Sugar
  • 2/3 Cup Canola Oil
  • 2 Large Eggs (room temp)
  • 1 15oz can Organic Pumpkin Puree
  • 1/4 Cup Whole Milk

    Crumbs/Glaze

  • 3/4 Cup Flour
  • 1/4 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 1/8 Cup Steel Cut Oats
  • 6 Tbsp Melted Butter
  • 1 Tsp Ground Cinnamon
  • --For Muffin Glaze--
  • 1 cup Confectioners Sugar
  • 1 Tbsp Milk
  • 1 Tbsp Pure Maple Syrup
instructions
  1. 1. Preheat oven to 425
  2. 2. Line large muffin tins with culinary lotus cups**(If you do not have large muffin tins simply use cupcake tins and use regular cupcake liners) You will yield closer to 16 muffins
  3. 3. In a medium sized bowl combine Flour through salt. Set aside
  4. 4. In a large bowl whisk together both sugars and all wet ingredients until fully incorporated
  5. 5. Fold the dry ingredients into the wet until just incorporated. Batter will appear lumpy
  6. 6. Fill muffin tins almost to the top. Set aside and prepare the crumb topping
  7. 7. Combine all crumb topping ingredients together in a bowl.
  8. 8. Top each muffin tin with a generous portion of the crumb topping. Press down slightly on the crumb topping to ensure it does not fall off during baking
  9. 9. Bake 6 minutes at 425 and then reduce the oven to 350 for 15-17 minutes
  10. 10. While the muffins are baking prepare the glaze. Combine all ingredients together until fully incorporated. You want this thick so if you need to add a little additional Confectioners sugar go ahead
  11. 11. Cool muffins slightly and drizzle with glaze
  12. 12. Serve and Enjoy!
