An authentic Italian zesty cookie


ingredients
  • 2 sticks of butter at room temperature
  • ½ c of Sugar
  • 4 Large Eggs
  • ½ tbsp Vanilla
  • 4 c of Flour
  • 1 tbsp Baking Powder
  • 1/3 c of Milk
  • Juice and Zest from 1 Lemon

    Icing

  • Juice and Zest from 1 Lemon
  • 2 c of powdered sugar
instructions
  1. 1. Preheat oven to 375
  2. 2. In the bowl of a mixer cream the butter and sugar
  3. 3. Add Eggs one at a time until each one is incorporated
  4. 4. Add Vanilla and half of the flour and baking powder
  5. 5. Until mixed and then half of the milk and repeat
  6. 6. Add lemon zest and juice
  7. 7. Dough will be very sticky. Refrigerate for 2-24 hours prior to baking
  8. 8. Drop 1tsp of dough on a parchment lined cookie sheet.
  9. 9. Bake for 10-12 minutes.
  10. 10. Allow cookies to cool completely before icing.

    Instructions for Icing

  1. 1. Combine icing in a bowl.
  2. 2. Dip the top of the cookies in the icing.
  3. 3. Allow excess to drip off. Allow icing to dry before storing

tips

You can also put the dough in a pastry bag or a zip-lock bag and pipe them out this way to make a more uniformed cookie.
