Italian Chicken with Cheesy Polenta

This recipe is such a delicious but price friendly meal to make! I love to do this meal when I have ingredients to use up which makes this dish that much better. Try it for an amazing dish for your next family dinner!

  • 1 store bought rotisserie chicken shredded
  • 1 jar marinara (I always have plenty in my freezer from the summer months but you could use your favorite store bought jar too)
  • Salt and pepper
  • Pinch red pepper flakes (omit if you do not like heat)
  • 4 cups of chicken stock
  • 1 cup polenta
  • 1 cup grated Parmesan cheese (extra for garnish )
  • Basil chiffonade
  1. 1. In a sauce pan over high heat bring chicken stock to boil
  2. 2. While you’re waiting for the stock to boil- In a frying pan with sides over medium heat add your marinara sauce and red pepper flakes. Taste for seasoning. Add salt and pepper if needed
  3. 3. To boiling chicken stock, whisk in polenta and reduce heat to medium while whisking every minute or two
  4. 4. While polenta is cooking- Add shredded chicken to marinara and stir to fully coat. Allow mixture to warm and come together. About 4-5 Minutes. Remembering to go back to the polenta every 1-2 minutes to stir. Set aside
  5. 5. At this point the polenta will be much thicker and you will need to use a wooden spoon. Stir polenta and taste for doneness. The polenta should take around 10-12 minutes. You can also cook your polenta according to the package. Polenta should be tender but also very creamy
  6. 6. Off of the heat stir in the Parmesan cheese
  7. 7. To assemble- spoon some polenta in the bottom of a pasta bowl, top with chicken mixture, and garnish with shaved Parmesan and basil


If you do not like polenta simply sub for your favorite pasta.
