Fig and Pancetta Flatbread

Get your Mediterranean on with this flatbread dish! A light and flavorful dish to share with friends at your next summer get together.

  • 2 tbsp Olive Oil
  • 1/2 red onion thinly sliced
  • 1 fresh store bought pizza dough (can use frozen, just allow extra time for the dough to thaw)
  • 2 tbsp store bought fig jam
  • 4 oz chopped pancetta (can buy it already chopped to save time)
  • 8 oz goat cheese crumbled with hands
  • 2 cups arugula
  • Salt and pepper
  1. 1. In a medium sauté pan over medium heat add 1 tbsp of olive oil. Once heated, add your thinly sliced onion. Stir often and allow to cook down until the onions are soft and caramelized. About 10–12 minutes. Set aside
  2. 2. In the meantime, preheat your oven to 400 degrees and prepare your pan and crust.
  3. 3. Grease a 10 x 13 baking sheet or similar sized pan. Take the thawed (if using frozen) dough and spread/stretch it out on the pan. This sometimes takes a little time but just be patient
  4. 4. Spread a thin layer of the fig jam all over the bottom of the dough. Top with onions, pancetta, and goat cheese. Season with salt and pepper
  5. 5. Bake for 15–20 minutes or until the bottom of the dough is golden brown and the pancetta is crispy. I use a spatula and lift the bottom of the flatbread to check. Remove from oven
  6. 6. Allow to cool slightly.
  7. 7. Top with arugula. Drizzle the arugula with the remaining tablespoon of olive oil. Season well with salt and pepper.
  8. 8. Slice and serve warm or at room temp!
