Chorizo Hash

This Chorizo Hash can be eaten for any meal, and it is the best comfort food!

  • 3/4 Lb Chorizo
  • 8 Small white potatoes OR 6 large potatoes
  • 1 Medium sized onion
  • Salt and Pepper to taste
  • Cilantro for garnishing
  • 1 Red pepper
  • Queso Fresco for garnishing
  1. 1. 1 tbsp olive oil heated in the pan over medium heat
  2. 2. Once oil is hot, add 3/4 lb of chorizo
  3. 3. Add chorizo to the pan breaking it up to bite size pieces
  4. 4. Cook for 5 minutes or until slightly brown
  5. 5. While your meat is browning, prepare your vegetables
  6. 6. Clean and cut the onion and potatoes, leaving the potato skin on
  7. 7. Using a slotted spoon, remove chorizo from pan once done cooking
  8. 8. While the pan is still hot, use the grease from the chorizo and dump the potatoes in to the pan
  9. 9. Once the potatoes are in, add salt in pepper, add water to the pan if your potatoes stick
  10. 10. Cook on medium heat for 8 minutes
  11. 11. Add in the peppers and onion, sauté for 3 - 4 minutes then add chorizo back into the pan
  12. 12. Constantly stir for 2-3 minutes
  13. 13. Remove hash from pan, top with cilantro and Queso Fresco
